Lemon Parsley Broccoli

A simple and healthy side dish packed with flavor! A favorite trio of parsley, lemon and butter brightens up the broccoli. Great as a summer side dish. (Side note: try adding slivered almonds or pine nuts. Provides a great flavor and crunch!)

LEMON PARSLEY BROCCOLI
12 ounces of broccoli florets (stems trimmed to about 1 inch)
1 lemon
3 handfuls of fresh chopped parsley
4 tablespoons of butter substitute (such as I Can't Believe It's Not Butter) or olive oil 
Handful of toasted pine nuts or slivered almonds (optional)
Salt to taste

Combine lemon, parsley and butter substitute in a small bowl. Wisk together until well mixed. Steam broccoli for 3 to 3 1/2 minutes until desired softness. I like my broccoli cooked at about 3 minutes so there is still a slight crunch. Remove broccoli from heat and let cool about a minute in a medium size serving bowl. Poor lemon parsley mixture over the broccoli and gently toss to mix. Add salt to taste. Top with toasted almonds or pine nuts (optional).
